Two possibilities come to mind.
The first is intermittent hypoglycemia or low blood sugar, sometimes due to increased insulin production. To evaluate this you would need to get a blood sample tested for glucose as soon as you could when experiencing weakness – like within an hour or sooner when weak.
Secondly, a complete blood count (CBC) would check for any form of anemia since red cells are needed to carry oxygen to the body tissues and brain.
You may not need to make a visit to an ER BUT you should consider a general check-up with a physician. BTW – you’re keeping great records of your changes.
